I went alone for dinner and had a spectacular time. I started with an excellent Negroni, one of the best I've had in Santiago. For a starter, I ordered the Burrata con Oleo al Carbone — a dish that perfectly combines the creaminess of the burrata with the mushrooms and guanciale, really well executed. For the main course, I went with the Carbonara Tartufo, which fully lived up to the restaurant's reputation for this dish — the truffle adds a spectacular touch without overpowering the other flavors. I paired it with a bottle of Chianti Rúfina (Villa Travignoli), which matched both dishes perfectly. A random detail that stuck with me: right as I was tasting the main course, "Volare" started playing in the background — it felt like the exact soundtrack for that moment. I finished with a Fernet Branca, which I tried for the first time and definitely isn't my thing, but it was part of the full experience. The service, the ambiance, and the food made dining alone feel just as special as dining with company.
