    We first visited Don Valentin around 2:30 pm one afternoon. Immediately inside the front doors was a hulking well-fed man dressed all in black with a demeanor matching his attire. As he slouched on the bar he informed us that no tables were available and the wait was likely 30 minutes or more. When we asked to reserve a table for the next day we were informed that reservations were only for larger groups at larger tables, tables for two were on a first come first served basis. He told us that they opened at 1:15pm, and a 1:30 arrival should secure us a table. We arrived at 1:45 pm the next day to find 3 tables available in the outside covered patio and more tables available inside. Big guy in black was slouched within a few feet of us but never seemed interested in taking our order. We eventually flagged him down. I ordered the rinones kidney dish and the Callos Madrilenos tripe with chorizo dish. My wife ordered champinones sauteed stuffed mushrooms. The mushrooms arrived swimming in oil on a platter.     Very, very good spanish cuisine. The tortilla and the Sangria are trully exceptional. Plus it's cheap and attention is good. Probably one of the best Spanish restaurants in Santiago.
